Habanero & Bleu Cheese Skillet Corn

Ingredients:

  • 1 tablespoon olive oil
  • 1 clove garlic grated
  • 3 green onions
  • 1 bag frozen corn
  • 1/2 cup bleu cheese crumbles
  • 1 cup chopped celery
  • 1/2 cup chopped celery leaves
  • 1-2 teaspoons habanero hot sauce (or buffalo wing sauce)
  • 4 ounces pancetta
  • 1/2 lime
  • Directions:

      1. Add your pancetta to your skillet with a little drizzle of olive oil, pancetta has enough fat so we add very little. We are using a cast iron skillet and planning to serve out of this dish as well so you can do the same.

      2. Cook your pancetta 5-7 minutes until crispy, then transfer to paper towels to drain. With the fat remaining in pan, add your garlic, green onions and celery and sauté until tender.

      3. Add your defrosted corn and mix together thoroughly. Then add in your hot sauce. Cook for about 10 minutes until corn is getting browned. Then mix in half of your pancetta. Remove from heat and top your corn with your blue cheese crumbles, chopped celery leaves and the rest of the pancetta. Sprinkle with lime juice.
