Linguine with Brie, Basil and Fresh Tomatoes

Ingredients:

  • 1/2 pound linguine (half of the package of linguine pictured)
  • 4 ripe tomatoes, cut into 1/2 inch cubes
  • 1/2 pound Brie cheese, rind removed, torn into irregular pieces (the amount pictured is actually 1/2 pound
  • 1 cup cleaned fresh basil leaves, cut into strips
  • 1 garlic clove, grated
  • 1/2 cup olive oil
  • salt and pepper to taste
  • Directions:

      Serving Size: this recipe makes two large portions for two people if this is your main dish, or 4 smaller portions if this is a side dish among veggies and your choice of protein.

      1. Put your cut tomatoes in a large bowl, add your basil, garlic, olive oil, salt, pepper and Brie. Let sit for about 30 minutes

      2. Bring your water to a boil. Add your linguine to your pot

      3. When linguine is cooked, drain. Then toss into your bowl of Brie tomato and basil and toss very well. The heat from the linguine will melt the Brie forming a delicious sauce.

      4. You want to serve this dish immediately! As the pasta sits in the Brie it tends to bind together just a bit (it's still delicious) but for the silkiest presentation serve immediately alongside some grilled Italian sausages, chicken or steak.
