Brussel Sprout Caesear Salad

This caesar salad is a fun twist on the usual romaine (you could do a mix of romaine and brussels - yum!) However the dressing is my version and does not include the usual egg yolk and anchovies. Feel free to add any additional ingredients (or extra parmessan) to fit your liking. Recipe below is for half of the pictured bag of brussels, if you want to do the entire bag then double the dressing quantity below. The half bag quantity was enough for two people.

Ingredients:

  • 1/2 bag of shaved brussel sprouts
  • juice of 1 lemon
  • 1/3 cup olive oil
  • 4-6 tablespoons finely grated parmesan cheese
  • 1 small clove garlic finely grated
  • 1 teaspoon dijon mustard
  • 1 teaspoon worcestershire sauce
  • lots of fresh ground pepper
  • 1 bag of cheese & garlic croutons
  • thick shavings of parmesan cheese, for toppping
  • lemon zest, for topping
  • Directions:

    1. Combine dressing ingredients in food processor: lemon, olive oil, parmesan, dijon, worcestershire, garlic and fresh ground pepper. Pulse until smooth.

    2. Put half of your shredded brussels into your serving bowl. Top with dressing and toss. Then add croutons, lemon zest, fresh ground pepper and thick shaves of parmesan for topping if you wish.
