Easy Sunday Chilaquiles

Ingredients:

  • 1 tablespoon olive oil
  • 2 garlic clovies, finely chopped
  • 1 white or red onion, finely chopped
  • 1 cup salsa
  • 1 can green chiles
  • Sprinkle cumin
  • 1/2 bag tortilla chips (enough to form nice layer on the bottom of skillet)
  • 4 eggs
  • Avocado
  • Greek yogurt
  • Fresh cilantro
  • Directions:

      1. Heat pan to medium-high heat. Add oil then add garlic and onion, sauté until tender. Add salsa and chiles to pan. Bring to a simmer, add cumin if you wish. Reduce heat to medium-low, and continue to simmer, uncovered, for 10 minutes, stirring occasionally.

      2. Add chips to pan, and stir to coat with salsa mixture. Crack eggs, 1 at a time, over chips, evenly spacing them in a circle inside pan. Reduce heat to medium-low, cover, and cook for 5 to 7 minutes or until eggs are set but still runny in the centers. Remove pan from heat.

      3. Sprinkle with cheese. Arrange avocado slices over eggs. Top with Greek yogurt, cilantro and hot sauce.
