Turkey, Kale, White Bean & Chickpea Pasta Soup

Ingredients:

  • 1 pound ground turkey
  • 4-5 cloves garlic finely chopped
  • 1 leek, thinly sliced
  • 1/4 cup white wine
  • 2 1/2 cups low sodium chicken broth
  • 1 small Banza Chickpea pasta
  • 1 15 ounce can cannellini beans
  • 2 cups curly kale
  • 1 tsp red pepper flakes
  • Olive oil
  • Kosher salt & fresh ground pepper
  • Directions:

      1. In your soup pot, heat olive oil. Saute garlic and leeks until tender. Once tender add turkey and season with salt and pepper. Once browned, deglaze pot with white wine and add chicken broth. Then bring soup to a simmer with lid on, 30 minutes.

      2. Once soup has simmered, add in drained beans, Banza pasta, lemon zest, pepper flakes. Cook pasta about 8 minutes until tender.

      3. Once pasta is cooked, add in kale and let wilt. Once wilted, ladle into bowls and serve with more lemon zest, parmesan cheese, olive oil and pepper flakes.
