Everything English Muffins

I called these the Everything English Muffins because yes, they do have Everything But the Bagel Cream Cheese on the base of the muffins. But this dish really has "everything" I want at breakfast or lunch time. Prosciutto in place of lox, topped with pickled onions, tomato, capers, fresh dill or fennel fronds, drizzle of lemon and cucs.

Ingredients:

• English muffins, sourdough toast, bagel or crackers
• Everything But the Bagel Seasoning + Cream Cheese
• Red onions, quick pickled in white wine vinegar
• Tomato
• Capers
• Fennel fronds or fresh dill
• Juice of 1 lemon
• Cucumber slices
