Melon, Mozzarella and Heirloom Tomato Salad
Ingredients:
- 1 cup arugula
- 12 yellow tomatoes
- 24 melon pieces
- 6 slices fresh mozzarella (this log is precut and comes in water, not as soft as a burrata but softer then a no water mozzarella)
- drizzle olive oil
- drizzle white balsamic
- kosher salt and fresh ground pepper
Directions:
Arrange arugula on platter. Lay your mozzarella slices on top. Then add your tomatoes and melon. Drizzle your platter with olive oil, and the white balsamic. You really don't need too much dressing here since the melon and tomato are so flavorful. Sprinkle with your salt and pepper and serve.
