Baked Corn & Zucchini Fritters

Ingredients:

  • 2 zucchini, peeled and grated
  • 1 cup frozen corn, defrosted
  • 1 tbsp dried dill
  • 2 eggs
  • 2 green onions, chopped
  • 2 cloves garlic, grated
  • 1/2 cup feta cheese
  • 1 cup panko
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 2 tablespoons olive oil
  • 1 tsp baking powder
  • Directions:

      1. Preheat over to 350 degrees. Then prepare your sheet pan lined with foil and spray with cooking spray. Set aside.

      2. Grate zucchini then place into a mesh strainer. Sprinkle well with kosher salt then let the zucchini sit for 20 minutes for liquid to release. Once set for 20 minutes, then squeeze out any additional liquid.

      3. In a bowl combine drained zucchini, corn, fresh ground pepper, garlic, green onion, olive oil, baking powder, dill, eggs, feta cheese and panko crumbs.

      4. Form small patties with your hands. We got about 8 patties with this quantity of mixture.

      5. Bake for 40 minutes. Flip at the 20 minute point so fritters are browned well on both sides.

      6. Top options include: fresh corn, sunny side up egg, avocado, green onions, Greek yogurt, Sriracha – the possibilities are endless!
