Grilled Marinated Grapes with Burrata & Fresh Basil

Ingredients:

  • 30 plump red grapes (for 4-5 skewers)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 small garlic clove, grated
  • 1 teaspoon brown sugar
  • kosher salt & fresh ground pepper
  • 2 large balls of burrata
  • baguette or crostini
  • Fresh basil
  • Directions:

      1. Put the grapes in a bowl with lid. Add vinegar, oil, garlic, sugar, kosher salt and pepper. Mix well and marinate for at least 1 hour. Skewer 5-6 grapes onto each skewer. Don't throw away the marinade as it will be used later.

      2. Place a grill pan over high heat. Once hot, add the grape skewers in batches and grill for 2 to 3 minutes, turning after 1 1/2 minutes. Remove from the heat.

      3. When ready to serve, tear burrata in half on serving platter. Place the grape skewers over the burrata and spoon marinade over the cheese. Sprinkle with basil and serve with fresh baguette.
